This vibrant salad is my go-to for a healthy and satisfying lunch (or dinner!). It’s packed with fresh, colorful ingredients that come together in a symphony of textures and flavors. Plus, it takes just minutes to prepare, making it perfect for busy weekdays.

Ingredients

  • Salad:
    • 1/2 head of romaine lettuce (or your favorite greens)
    • 200 g cherry tomatoes
    • 2 large cucumbers
    • 1/2 red bell pepper
    • 1/2 red onion
    • 1 ripe avocado
    • 80 g crumbled feta cheese
    • 50 g black olives
  • Dressing:
    • Juice of 1/2 lemon
    • 4 tablespoons olive oil
    • 1/2 teaspoon black pepper
    • 1/3 teaspoon salt
    • 1 teaspoon dried oregano

Instructions

  1. Prep the Veggies: Wash and chop the lettuce into bite-sized pieces. Roughly chop the cherry tomatoes, cucumbers, red bell pepper, and red onion.
  2. Assemble the Salad: In a large bowl, combine the chopped lettuce, tomatoes, cucumbers, red pepper, and red onion. Add the cubed avocado, crumbled feta cheese, and black olives.
  3. Whip Up the Dressing: In a jar or small bowl, whisk together the lemon juice, olive oil, black pepper, salt, and dried oregano.
  4. Dress and Serve: Pour the dressing over the salad and toss gently to coat. Serve immediately and enjoy!
